Le contexte de l'etude; Histoire du bassin laitier; La commercialisation des produits lactes et les fabriquettes; Evolution de la production; Strategies et pratiques; Quelques recommandations techniques pour l1appui a la production. La plupart des communautés du Nordeste ont pour origine le démembrement ou Ia division des grandes latifundias, comme l'atteste l'analyse de Ia toponymie de Ia plupart des communautés nordestines qui portent souvent le nom de Ia fazenda d'origine. Au fil des générations, Ia fazenda perd son intégrité mais le nom persiste. C'est Ia raison pour laquelle dans chaque communauté prédomine, bien souvent, le nom d'une famille, celle de l'ancien propriétaire. |
