The qualified Denomination of Origin and coffee producer region of Caparaó, which is located on the border between Minas Gerais and Espírito Santo states, Brazil, has stood out over recent years for the production of specialty coffees, pioneering the use of fermentation as post-harvest processing to modify and improve the sensory profiles of the beans and of the beverage. |
