Recent studies have reported many preventive and therapeutic properties against cardiovascular disease and cancer, associated to the consumption of polyphenols, including anthocyanins. Anthocyanin bioavailability is a major issue regarding their biological effects, because the results are still controversial and divergent. Bioaccessibility and absorption studies represent the first steps in predicting bioavailability of the bioactive compounds in humans. The objectives of the current research were to perform an in vitro gastro-intestinal digestion model by mimicking oral, gastric and intestinal physiological conditions, in order to investigate the bioaccessibility of blueberry anthocyanins. Materials and methods – Identification and quantification of anthocyanins were carried out by HPLC and ESI-MS/MS detector. Results and discussion – Total anthocyanin content (125.27 ± 19.80 mg 100 g-1) was greatly decreased after digestion (6.50 ± 1.03 mg 100 g-1), which represented 5.20 ± 0.82% of bioaccessibility. All delphinidin derivatives were unstable, not detected after digestion, and had the lowest bioaccessible forms. Otherwise, malvidin derivatives, including the acetyl form, were stable and displayed the highest bioaccessibility percentage. More -OCH3 groups seems to increase the bioaccessibility, because higher structure size molecules can promote steric hindrance and impact on anthocyanin low degradation or conversion to non-detectable forms. Conclusion – These results should contribute to answer some questions concerning anthocyanin stability during gastro-intestinal path. This review had as general objective to indicate possible biotechnological applications to the by-product generated after the harvest of edible mushrooms, known as Spent Mushroom Substrate (SMS). SMS could be understood as plant and microbial biomass discarded and not used by mushroom farm. Nowadays, several initiatives have searched add value to agro-industrial waste in the most diBerent sectors, in order to reduce social and environmental impacts, adding economic value in the production chains. SMS is a by-product which features biological and chemical characteristics that make it potential for biotechnological applications in areas such as: enzyme production, supplemental feed, bioremediation, biofuels (second generation ethanol, biodiesel and biogas), thermochemical (pyrolysis) and bioactive (polysaccharides, immuno-modulating proteins), among others. |
