A. aAFM images of zein films on mica. c2001 aThe zeins are proteins that have some unusual properties as insolubility in aqueous solution and the presence of repeated domains in their primary structure. Among the zeins the alfa zeins (soluble only in alcohol solutions) are the most abundant proteins corresponding to Mr 19 and 22 KDa in the SDS/PAGE. In this work was studied at the first time the conformation of the alfa zeins as films deposited in the mica by AFM.
