The introduction of biofortied crops such as beans with higher iron content is a useful tool in preventing iron deficiency diseases, as anemia. Thus, the measurement of the absorption of minerals is essential to evaluate the use of biofortied foods. This study evaluated the iron bioavailability of common beans cultivars BRS Estilo, with low iron content and BRS Pontal, that present intermediate iron content, in man through reliable techniques, not yet used in Brazil.
