João Pessoa: SEBRAE-PB: EMEPA-PB, 2007. 3 f. 1 CD-ROM.c2007  aResumo: Objetivou-se com este trabalho avaliar o efeito dos níveis de substituição do farelo de milho por farelo de palma na ração de terminação de cordeiros Santa Inês sobre o peso e relação dos constituintes teciduais da perna. O experimento foi conduzido na Estação Experimental de Pendência pertencente a EMEPA-PB. Foram utilizados 40 ovinos machos Santa Inês, confinados, distribuídos em quatro tratamentos, que consistiram em níveis crescentes de substituição do farelo de milho por farelo de palma: 0, 33, 66 e 100 % de substituição. Os animais foram abatidos e a carcaça foi seccionada ao meio, daí foi separada a perna para dissecação em músculo, osso, gordura subcutânea, gordura intermuscular e gordura total. Esses tecidos foram pesados e feita as relações músculo:osso e músculo:gordura. Foi feita a ANOVA dos resultados e as médias comparadas pelo teste de Tukey a 5%. Observou-se efeito de suplementação (P&lt0,05) sobre peso das gorduras total, subcutânea e intermuscular sobre relação músculo:gordura da perna. O farelo de palma pode substituir biologicamente quanto à deposição muscular, mas o nível de 100% de substituição produz pernas com menor quantidade de gordura. [Effect of substitution of corn crumb for spineless cactus crumb on the tissue composition of leg from Santa Inês lambs confined]. Abstract: The objective of this study was to evaluate the effect of the levels of substitution of corn crumb for spineless cactus crumb in the diet on the tissues constituent weight of leg, and their ratios, from Santa Inês lambs finished at feedlot. This study was carried out at Pendência Experimental Station of belonging the State Company of Agricultural Research of Paraíba S.A. (EMEPA-PB). Forty male Santa Inês lambs were used, feedlot, the treatments were randomly assigned to the animals according to a completely randomized design, with four treatments, that consisted of growing levels of substitution of corn crumb for spineless cactus crumb: 0, 33, 66 and 100% of substitution and ten replications (lambs). The animals were slaughtered and the carcass was split up to the middle, then the leg was separated for dissecation of muscle, bone, subcutaneous fat, inter-muscle fat and total fat. Those tissues were weighted and it determined muscle:bone and musclue:fat ratio.The averages were compared by Tukey Test to 5%. The results showed effect of substitution level (P &lt0,05) on weight of subcutaneous fat, inter-muscle fat, total fat and muscle:fat ratio.
