Ref. 56228. aThe objective of this study was to investigate the influence of different input powers on ultrasonic-assisted enzymatic hydrolysis (USAH) of tilapia mechanically separated meat (MSM). Antioxidant activity, free aromatic amino acids and peptide profiles of the hydrolysates of tilapia MSM were analyzed. The use of high power ultrasound in the assisted hydrolysis of fish proteins reduced process time, being a potential research field for the fish industry.
