In addition both alpha-La and beta were expressed at three quantitative levels which determiners a different quality of milk if we consider the major intolerance against the alpha-Lg by people which are allergic to com milk. If can be inferred that the prevalent use of Girgentana milk as a drink could be related to this particular composition which, when considering the antigenicity of ?-s1 Casein and the intolerance against the beta-Lg should prove to be more beneficial than the use of cow milk in infant formula production. aFood quality aGenetic polymorphism aGoat milk aCaprino aLeite de cabra aPolimorfismo genético aQualidade aQuality1 aPORTOLANO, B.1 aTRONCONE, E.1 aPIZZOLONGO, F.1 aFERRANTI, P.1 aADDEO, F.1 aALICATA, M.
