Special issue of Food Quality and Preference, which contains oral papers and posters presented at the 10th Pangborn Sensory Science Symposium, held in Rio de Janeiro, Brazil in August 2013. This was the first time a Pangborn Sympo- sium was held outside Europe and North America, and it was a great moment for assembling sensory professionals, representing a major landmark for the Sensory and Consumer Science commu- nity. The Symposium was organized by Embrapa Food Technology and the Brazilian Association of Sensory Science (ABCS). The Co- chairs hope that this editorial and issue bring warm memories to those who were in Rio when the city hosted the most important event in the field of sensory and consumer science |
