Chemical characteristics of soybeans normal cultivars and for human consumption were studied to identify the most adequate for different soybean foods processing. BRS 213 cultivars showed the most less of lipoxygenases activity and the BRS 267 cultivars the most less hexanal content and the major sucrose content hence both can be using for production of foods with better flavor. BRS 267 cultivars can be indicate for consumption direct because after cooking of grains showed aglycon glucosides. |
