Resumo: Nos últimos anos se tem dado especial atenção ao sabor e aroma das carnes, especialmente a ovina, tanto em relação à sua estabilidade quanto à ausência de odores estranhos. O flavour da carne ainda não está totalmente compreendido, e é considerado um sistema de grande complexidade no qual, diversos fatores, isolados ou em associação, influenciam a formação de compostos voláteis, que por sua vez são responsáveis pelas características de sabor e aroma. Fatores como dieta, idade de abate, condição sexual, tipo de músculo, estado de engorduramento, efeitos ambientais e da alimentação, temperatura e tempo de cozimento, pH, maturação e, sobretudo, preferência individual dos consumidores foram relatados como parâmetros fundamentais nas características de sabor e aroma e, consequentemente, na aceitação da carne ovina. A gordura é considerada precursora de compostos aromáticos e de sabor, e dependendo do seu estado na carne pode favorecer o aparecimento de substâncias desejáveis ou indesejáveis. Dessa forma, objetivou-se abordar os fatores responsáveis pelas características de sabor e aroma da carne ovina, pois atualmente é lançada à indústria e à comunidade científica o desafio da compreensão destes.
[Sensorial Characteristics of Sheep Meat: Flavour and Aroma].
Abstract: Lately, a special attention has been given to the flavor and aroma of the meat, especially of lamb, as concerning to its stability as to the absence of strange odors. Meat flavor has not been well understood yet, and it is considered as a system of great complexity, whereas diverse factors, isolated or in association, influence the volatile compounds formation, which in turn, is responsible for the characteristics of flavor and aroma. Factors as diet, slaughter age, sexual condition, type of muscle, adiposity state, environmental and feeding effects and coking temperature and time, pH, maturation and, most of all, the consumers individual preference had been reported as basic parameters in the characteristics of the flavor and aroma, and hence, in the acceptance of the lamb meat. The fat is considered as a precursor of aroma and flavor compounds, and depending on its state in the meat, may favor the appearance of desirable or undesirable substances. Therefore, it was aimed to study all the responsible factors for the flavor and aroma characteristics of lamb meat since the understanding of such factor represents a challenge to the industry and cientific communities. Here we provide the ‘Global Spectrum of Plant Form and Function Dataset’, containing species mean values for six vascular plant traits. Together, these traits –plant height, stem specific density, leaf area, leaf mass per area, leaf nitrogen content per dry mass, and diaspore (seed or spore) mass – define the primary axes of variation in plant form and function. The dataset is based on ca. 1 million trait records received via the TRY database (representing ca. 2,500 original publications) and additional unpublished data. It provides 92,159 species mean values for the six traits, covering 46,047 species. The data are complemented by higher-level taxonomic classification and six categorical traits (woodiness, growth form, succulence, adaptation to terrestrial or aquatic habitats, nutrition type and leaf type). Data quality management is based on a probabilistic approach combined with comprehensive validation against expert knowledge and external information. Intense data acquisition and thorough quality control produced the largest and, to our knowledge, most accurate compilation of empirically observed vascular plant species mean traits to date. |
