Abstract: Sheep production in Uruguay plays a very important role in our economy given its fundamental economical and social contributions to our society. Looking for new options for the sheep industry, high quality sheep meat production appears with a huge potential, as a key alternative to diversify and to promote the productivity and income of sheep farmers and the other agents of the chain. During the last decades, the world meat market requirements have changed, in terms of environment sustainability, animal welfare, sanitary status, food safety, product consistency and differentiation, continuous supply, cooking attributes and options, consumer health, etc. Having in consideration all these consumer tendencies and the high competitive advantages of the main sheep meat exporting countries, to improve processes efficiency, product quality, processes and product certification, are the major challenges that the Uruguayan sheep meat industry has to face. The development of technology innovations which considering these challenges constitutes a major effort in increasing our market competitiveness. The present article summarized the recent advances achieved in lamb meat quality research as well as pointed out the most important constrains that the Uruguayan sheep meat chain has to face in order to reach and consolidate its position as one of the major sheep meat exporting country in the world. |
