RESUMO - A Peste Suína Africana - PSA era descrita na literatura científica, até a década de 60 do século passado, como uma enfermidade viral altamente contagiosa, febril e sistêmica, alta taxa de mortalidade, próximo a 100% entre 7 e 10 dias pós-infecção. Posteriormente, a partir dos anos 70, o vírus da PSA apresentou menor virulência, principalmente na Península Ibérica. No Brasil, a ocorrência da PSA manifestou sinais clínicos que variavam de alta, moderada, a baixa virulência. Em função dessas observações clínicas a taxa de mortalidade igualmente variava de cem a quase zero por cento, naqueles focos onde a PSA manifestava de forma subaguda, ou seja, de baixa virulência. Esse fenômeno clínico natural gerou grandes dúvidas sobre a real ocorrência da PSA, ainda persistente em função da total liberdade de imprensa para tratar dessa matéria, publicando todo o tipo de contraditório. O objetivo do presente trabalho é avaliar, 30 anos após, o surto de Peste Suína Africana ocorrido no município de Paracambí (RJ), bem como rememorar historicamente o trabalho efetuado pelas autoridades brasileiras que culminou com a erradicação desta enfermidade há 25 anos passados. O foco índice e primário foi diagnosticado por estudos epidemiológicos, clínico-patológicos e virológicos, bem como a doença foi reproduzida experimentalmente no Brasil. A ocorrência da PSA no Brasil foi confirmada por isolamento viral e determinação de patogenicidade no Laboratório de Plum Island Disease Center, New York, Estados Unidos da América. Mesmo antes dessa confirmação laboratorial, o Brasil decretou "Estado de Emergência Sanitária" adotando as providências de contenção e posterior erradicação em função do diagnóstico precoce e da rápida e eficiente medida de controle adotada pelas autoridades sanitárias. Esse fenômeno zoossanitário proporcionou a reorganização e tecnificação da suinocultura nacional e elevação da consciência sanitária, ascendendo o País à categoria de maior exportador mundial de carnes. ABSTRACT - Up to the 1960s African Swine Fever (ASF) was described in the scientific literature as a highly contagious viral, feverish and systemic disease. After 7 ? 10 days of infection, the mortality of infected individuals was as high as 100%. Nevertheless, during the 1970s, especially on the Iberian Peninsula, the ASF virus showed lower virulence. The aim of this work was to valuate the ASF outbreak occurred in Paracambi municipality (Rio de Janeiro state, Brazil) 30 years ago, and to remind the eradication work made by Brazilian authorities that resulted in the eradication of this disease 25 years ago in 1984. In Brazil, the occurrence of ASF showed signs of high, moderate and low virulence. Through clinical observation, the death rate varied from 100% to 0%, in those places where acute ASF occurred. This clinical phenomenon caused a wide range of questions on the real level of ASF occurrence. This still persists, mainly due to press freedom in reporting all kinds of contradictions on the subject. The primary and index focus focal point was diagnosed by epidemiological, clinico-pathological and virological studies. The disease was also reproduced experimentally in Brazil. ASF was confirmed in the country by isolating the virus and certifying its pathogenicity in the Laboratory of Plum Island Disease Center, New York, USA. Even before the laboratory results, Brazil declared a ?State of Sanitary Emergency?, with the health authorities adopting rapid control measures to restrain and eradicate the disease. These zoosanitary phenomena caused the reorganization and increase in technology use of the national swine industry, improving health consciousness and helping Brazil to become one of the world largest pork meat exporters. A current alternative for meeting the modern consumer?s beans food demands is the industrial processing. This study evaluated the adaptability of eight Brazilian beans cultivars to industrial canning from commercial class cultivars of Carioca and of Black beans. The grains were processed in an industry sector using metallic cans with a capacity of 420 g, where the samples were conditioned without previous hydration. The cooking and sterilization process took place in a rotating autoclave. Quality parameters were evaluated in the canned beans. As a result, it was verified that, for the Carioca class, the Estilo cultivar differs from the rest of the genetic materials in terms of its low drained weight, which contributes to the increase in the total solids in the sauce, which have low hardness values. Estilo cultivar is not suitable for the type of processing used in this experiment. For the Black class, similar quality characteristics were observed between Esplendor and Uirapuru and between Esteio and Campeiro cultivars, where the latter stands out due to its lower damaged bean indices after processing. Finally, with the information present in this paper we intend to contribute to future researches on this subject and thereby increase the consumption and exportation of beans as processed product. |
