Nutrient deficiency symptoms bear a direct relationship with the plant biological functions, starting with modifications at the biochemical levei and then evolving to the sub cellular, cellular, levels and, at the last stage, to the tissue levei, this being the only instance when symptoms become visible. Each nutrient is characterized by singular symptoms so that itis possible, by visual examination of the plant, to evaluate the orchard nutritional status. Although reaching its highest efficiency when appliedto perennial plants, visual examination is still considered as a complementto soil and plant chemical analyses. |

Monitoring maturation to determine harvest time is very important to determine the enological potential and the quality characteristics and typicality of the wines (Borghezan et al., 2011). Considering that there is no cold weather in the São Francisco Valley, it is possible to scale and production of two harvests per year. This study aimed to determine the chemical composition of the ?Syrah? and ?Tempranillo? grapes, during maturation. Sixty plants were used for each cultivar, divided into three blocks. |
