Two methods for detremining the colour of banana pulp, the use of a portable tristimulus colourimeter and visual matching with colour charts, were compared. Pulp colour of ripe and unripe bananas was evaluated in both the darker central carpellary zone and the outer pulp zone near the peel of the fruit. Colour coodinates L *and b* were highly correlated, r = .0, 89 and 0,87 respectively with the visual matching colour charts, the central carpellary region giving higher correlations than the outer pulp zone. An example of the use of the colourimeter is given where the pulp colour changes during ripening of normal and fruit affected by yellow pulp are compared. This paper shows that pulp colour can be objectively defined and this thecnique is now in current useinvestigating changes in pulp colour in relation to banana maturtity and the pre-harvest environment. |
