Cassava (Manihot esculenta Crantz) is one of the most important food sources in tropical countries where it is grown by small farmers largely for their own or local consumption. A serious constraint to extending cassava's marketability and uses is the rapid post-harvest physiological deterioration (PPD) suffered by the roots. PPD involves the accumulation of secondary metabolites such as flavonoids and coumarins (e.g. scopoletin) which have been reported to act as phytoalexins (low molecular weight anti-microbial commpounds). We are testing the anti-microbial activity of ethanolic extracts of cassava roots undergooing PPD using bioassays. These include thin layer chromatographic bioautographs and agar well diffusion assays, using different reference micro-organisms as Trichoderma harzianum, Cladosporium cucumerinum, Fusarium avena, and Staphylococcus aureus. |
