Phytosterols are known to lower total and LDL-cholesterol in individuals with elevated blood cholesterol levels. Phytosterols have been approved for incorporation into foods. Information on phytosterols composition of soybean cultivars and environmental effects on their content are important for processing industries. Soybean is produced in a wide range of environmental conditions (5°N to 32°S latitude), and the differences of sowing locations may affect its chemical composition. This study was conducted to determine phytosterol composition in Brazilian soybean cultivars sowed in different locations of the production region. Phytosterols were determined in the laboratory using gas chromatography. Results indicated that in the South Region (average of three locations), cv. BRS 134 presented lower content of total phytosterols (139.14mg/l00g) when compared with cvs. IAS 5 and Embrapa 59 (224.24mg/l00 and 219.88mg/100g, respectively). Among locations Palotina (24°17' Latitude S) and Campos Novos (27°24' Latitude S) favored formation of phytosterols, while a reduced level of these compounds was observed in Pato Branco (26°13' Latitude S). At the Northeast Region, cv. Cristalina showed higher content of total phytosterols (203.85mg/l00g), particularly in Condomínio Boa Esperança (7°13' Latitude S) which location favored concentration of these compounds. At the Central Region, Uberlândia (18°55' Latitude S) was the site with higher concentrations of phytosterol (250.09 mg/100g average), and cv. BRS Gralha presented the highest value for all phytosterols (307.50 mg/l00g); BRS Piraíba presented high concentrations of campestrol (49.45 mg/l00g), while cv. BRS Aurora had higher concentrations of ß-sistosterols (148.30mg/100g). Embrapa 48 sowed in six locations of the South Region showed reduced concentrations of all phytosterols in Guarapuava (25°23' Latitude S) (63.54, 39.85, and 18.44 mg/100g for ß-sistosterol, campestrol and stigmasterol, respectively.
