A produção de hortaliças é uma importante atividade econômica, colaborando com a sustentabilidade e o desenvolvimento local. Atualmente, o mercado de hortaliças vem apresentando mudanças frente à consciência do consumidor, atento à saúde e à qualidade de vida. As feiras são importantes canais de comercialização que aproximam o produtor do consumidor. Este trabalho tem como objetivo caracterizar e analisar as hortaliças comercializadas nas principais feiras da cidade de Botucatu e seus respectivos sistemas de produção. O trabalho de campo foi baseado em entrevistas com questões semiestruturadas e abertas. O município de Botucatu está localizado na região centro-sul do estado de São Paulo, distante da capital paulista cerca de 230 km. Foram realizadas visitas nas três principais feiras da cidade entre março e julho de 2009. Os resultados mostraram que as principais feiras de Botucatu são importantes espaços de comercialização de hortaliças, oferecendo variedade de produtos convencionais e orgânicos, com possibilidades de expansão na comercialização de orgânicos. A estrutura de produção dos feirantes é de pequenos produtores e produção diversificada. A maioria é composta por agricultores que utilizam tecnologias simples e conhecimento dos mecanismos de comercialização. Vegetable production is an important economic activity, collaborating with sustainability and local development. Currently, the vegetable market has been changing in the face of consumer awareness, mindful of health and quality of life. Fairs are important marketing channels that bring producers and consumers together. This work aims to characterize and analyze the vegetables sold at the main fairs in the city of Botucatu and their respective production systems. The fieldwork was based on interviews with semi-structured and open-ended questions. The municipality of Botucatu is located in the south-central region of the state of São Paulo, about 230 km from the capital of São Paulo. Visits were carried out at the three main fairs in the city between March and July 2009. The results showed that the main fairs in Botucatu are important spaces for the sale of vegetables, offering a variety of conventional and organic products, with possibilities for expansion in the sale of organic products. The production structure of the market vendors is made up of small producers and diversified production. Most are farmers who use simple technologies and knowledge of marketing mechanisms. The objective of this work was to evaluate the effectiveness of ozone in the control of fungi and the degradation of fumonisins in maize and possible effects on the chemical composition of the product. Two cultivars of hybrid maize (30F53H and AS1581 PRO) were used. Initially, the saturation process of the porous medium with ozone was studied. The incidence of Fusarium verticillioides, Penicillium spp. and Aspergillus flavus; the suitability of ozone to detoxify grains contaminated by fumonisins and possible qualitative changes in the product were evaluated. Ozone was applied at an inlet ozone concentration of 13.5 mg L−1 and flow rate of 1.0 L min−1, in five exposure periods (0, 12, 24, 36, 48 and 60 h). The estimated daily intake of FB by horses from grains subjected to ozonation was obtained. For the hybrid AS1581PRO, the estimated saturation time and concentration were equivalent to 67.34 min and 5.91 mg L−1, respectively. With regard to the hybrid 30F53H, the saturation time and concentration were 41.74 min and 8.72 mg L−1, respectively. Ozone was an effective fungicidal agent. The use of a concentration of 13.5 mg L−1 over a 24 h-treatment led to a reduction of 81.2 and 86.2% in the concentrations of fumonisin B1 and fumonisin B2, respectively. The estimated daily intake of fumonisins was reduced to 17.21 µg kg−1BW per day, corresponding to half of the acceptable daily intake for equines. Ozone did not affect the chemical composition of the grain. Ozone is effective in controlling fungi and as a detoxifying agent in maize contaminated by fumonisins.
