Mechanical measurements which corresponded to human sensibility were investigated to evaluate the relative difficulty peeling in citrus fruits objectively. Since manual peeling is too complicated to be replace with mechanical measurements directly, the measurement were separated into the following three parts for convenience:1. force for penetrating peel (penetration test),2. force for separating peel and fruit flesh(cutting test),3. force for ripping peel(ripping test). Tere was a highcorrelation between the scores of sensory method and values of mechanical measurememt, suggesting that these methods are suitable for the evaluation of the relative difficulty in peeling citrus fruit. Strengthof peel varied depending on the citrus varieties, degree of maturationand crop load. The reasons for these differences were analyzed. |
