Tuberous roots of cassava are rich in starch and one of the major problems limiting the possibilities for production and distribution of cassava is rapid deterioration after harvesting cassava tubers. Postharvest deterioration (PHD) in cassava consists of primary deterioration and later secondary deterioration. The aim of this research was to study PHD, especially focusing on the primary deterioration process. Cassava tuber slices of two genotypes (M.Col22 and Faroka) were cut and incubated under controlled conditions for varying time points (from Oh to 17 days). From these different samples several parameters were in investigated like protein, nucleic acid, soluble sugars and starch contents during the process of PHD. These studies showed that fresh weight decreased mainly due to water loss. |
