Six blue acylated anthocyanins were isolated from the blue flowers of Clitoria ternatea and were stable in neutral solution for several months. The anthocyanins were all based on delphinidin 3,3',5'-triglucoside and were designated ternatins A-F. Ternatin A contained, additionally, glucose (1 mol), p-coumaric acid (2 mol) and malonic acid (1 mol). Ternatin B contained, additionally, glucose (2 mol), p-coumaric acid (3 mol) and malonic acid (1 mol). Five flavonols, identified as kaempferol, kaempferol 3-glucoside, robinin, quercetin and quercetin 3-glucoside were also isolated from the flowers but they were ineffective as co-pigments. Ternatins A, B and D were more stable in neutral solution than five other acylated anthocyanins, the stabilities of whichdecreased in the order Ipomea 'Heanenly Blue' anthocyanin, cinerarin, rubrocinerarin, gentiodelphin and platyconin. Factors affecting the stabilities of polyacylated anthocyanins are discussed. |
