The decontamination of spices with chemicals has been prohibited or restricted by health or environment reasons. The irradiation and heating are used as an alternative methods, but these treatments induce the production of the free radicals. As free radicals can be dangerous for health, monitoring these species are an important factor for the quality control of the spices. |
