Flavanones are the predominant group of flavonoids in the juice of sweet orange. In addition to their flavor-related role, flavanoves have been considered important dietary components with a role in maintaining healthy blood vessels and bones, as cancer and mutagenesis-suppressing agents and as anti-allergic, anti-inflamatory and anti-microbial compounds. Chalcone isomerase (CHI) catalyses the committed cyclization of bicyclic chalcones into tricyclic (S)-flavanones and is the key enzyme on directing the flavonoid pathway to the synthesis of flavanones, flavones, flavonols, isoflavones, tannins and anthocyanins. While it is suggested in the literature that a single-copy gene codes for CHI in sweet orange (Citrus sinensis L. Osb.), analysis of Citrus ESTs (CitEST) database indicates the presence of at least three putative chi transcripts, which supports the hypothesis of a multigene family coding for chalcone isomerase isoforms in fruits of sweet orange with the expression of the enzyme in both early and late fruit developmental stages. |
