Soybean can be an alternative to improve Brazilian nutritional status, since it i abundant, economical and has high quality protein. Due to economical problems there is a strong appeal for direct consumption, which is more economical and reaches the largest part of population. In order to improve soybean cultivars for human consumption "in natura", a breeding program, was initiated at the National Soybean Research Center of EMBRAPA, in 1985. The main objective of this program is to improve soybean flavor. `Late Giant', a vegetable type introduced from Japan is the source of this quality. Through crosses with soybean vegetable types, good flavor is being introduced in Brazilian cultivars, in high protein lines, and is small-seeded lines. Through single seed descent (SSD) method, populations are carried until F3 generation, when taste tests start. Selected plants are tested and classified according to taste score classes, ranging from 1.0 (worst) to 5.0 (best flavor). `Late Giant' flavor is 5.0 while the commercial cultivar `Bragg' is 1.0. These genotypes are used as checks in the taste tests. Along with the breeding program, a project to promote soybean as human food is being carried out. This program includes teaching Brazilians on utilization and nutritional value of soybean. To make soybean more suitable for the Brazilian taste, soybean was added to traditional Brazilian recipes as a complemental ingredient for improving nutritional value.
