Purees of tropical fruits are used in nectars, breakfast drinks, jams and preserves and other products. A high quality purce concentratr would be desirable form in which to transport this product from the tropics to markets in the temperature zone. An important characteristic of a concentrate is its consistency or thich is limiting in the performance of some evaporators and can be a problem in puping or filling the product into containers. To investigate this further, the rheological properties of guava purees and puree concentrates were determined with a tube viscometer. |
