Although recent data suggest that protein is not limiting for much of the world's population if enough calories are provided to permit efficient utilization of the protein available (Sukhatme, 1975), it is clear that there are many regions which are acutely deficient in protein but have an abundant supply of carbohydrate. much of this carbohydrate is in the form of starch root crops and starch waste products such as bananas which are unsuitable for export or domestic consumption. The developed countries have substantial ameunts of starchy waste materials such as culled potatoes and wash waters from potato chip manufacturing plants. Economical conversion of such carbohydrates to protein would have obvious value. |
