Higher ABA levels were recorded in shoot apices of the more vigorous cultivar 'Langra` than that of the less vigorous cultivar 'Kerala Dwarf`. The ABA content of dormant apical buds was nearly threefold higher than that of active ones in both cultivars. Thees of cv. 'Alphonso` in which the vigour was restricted by soil drenching tratment with paclobutrazol (2.5 g/tree) reveled lower ABA levels (2.275 ug/g fresh weight). than untreaed control trees (2.80 ug/g fresh weight). Hence, in is postulated that ABA might not be the inhibitor responsible for restriction of vigour in mango trees, but might play a role in the determination of tree size by regulating the flushing habit. |

RESUMO: Foram estudados alguns parâmetros de processo na produção de pão francês pré-assado, como o tempo de fermentação e a temperatura de pré-assamento, além dos efeitos provocados pelas etapas de assamento, resfriamento e armazenamento no volume específico do pão produzido. Observou-se que a fermentação final da massa, para este tipo de produto, deve ser mais curta do que a utilizada no processo convencional e que, para o pré-assamento em forno de lastro, a temperatura pode ser a mesma que a utilizada para o assamento final. O pão pré-assado apresentou uma contração de volume de 8% após a etapa de assamento final. Com relação ao pão produzido pelo processo convencional, o volume do pão pré-assado foi 16% inferior. Para evitar perdas de peso do produto, o tempo de resfriamento deve ser rigorosamente controlado. Durante as primeiras 24 horas de armazenamento a -18oC, o pão pré-assado sofreu uma pequena redução de seu volume; após esta redução inicial, o volume permaneceu praticamente inalterado por 10 dias. ABSTRACT: The fermentation time and pre-baking temperature, as well as the effects on the specific volume of bread loaves, due to the conditions used for baking, cooling and storage, were studied in the production process of pre-baked French type bread. It was observed that the final fermentation time of the dough should be shorter than that used in the conventional process and that the same temperature could be used for the pre-baking and final baking steps. After the pre-baking step, the loaves presented a reduction of 8% in volume, and were 16% smaller than loaves produced using the conventional breadmaking process for French type bread. The cooling step should be strictly controlled in order to avoid weight losses of the product. During storage at 18oC, the pre-baked loaves presented a small reduction in their volume, and after this initial reduction, the volume remained practically unaltered for 10 days.
