The present experiment was carried out to clarify the portion of egg yolk constituents from where the fatty acids liberated by the coagulating factor and to confirm the principal nature of the factor. From the results it may be possible that the factor is a kind of the phospholipase-like enzyme active to the ester bond of the egg yolk phospholipids and liberates fatty acids but not the phosphorus. |
