This group had higher proportion of closely trimed retail cuts from the especial hindquarter (33.65%), higher proportion and lesser amounts of trimmable fat (6.96%). Crossbred I (2/4 Marchigina-Nelore) bulls ad the lowst proportion of total closely trimmed retail cuts (73.94%) as well as a higher proportion of bone (18.25%), suggesting that bulls of this breeding should be fed longer to attain e higher muscle to bone proportion. On a slaughter time group bassis, total trimed retail cut weights increased (P<.05) with age and finishing, but when expressed as percentage, these yilds tend to decrease. A significant increase in weight of trimings was noted due to increased fat deposition. aanimal breeding abeef cattle abulls acrossbreds aNellore aBovino aCarcaça aCruzamento aMelhoramento Genético Animal aBovine aBovino de corte aCarcass aComparacao aComparison aCrossbred aEvaluation aEvolucao aNelore aNelore catle aRaca Nelore aRaca Zebu aRace aZebu cattle
