In the submerged process it was studied in a 250-liter fermentor, that is semi-pilot size production, and offers the opportunity to scale up to a commercial scale. When comparing with semi-solid processes, it can be concluded that in developing countries this is a lower cost process that uses cheaper sources of carbohydrates and proteins available in those regions. Threfore, it was decided to study parameters and variables to solve the difficulties encountered in this process. Heat and mass transfer, and sterility level are important engineering aspects to be considered.
