S. aEffect of slaughter age on fat components of the "Mestico" goat meat. c2000 aThe effect of slaughter age on fat, cholesterol and fatty acids contents was determined using 16 samples of male "mestiço" goat. Groups of four animals were slaughtered at 175, 210, 265 and 310 days. Slaughter age had a significant (P<0.01) effect only on cholesterol content, which increased with advancing age. Meat from young goats presented the lowest fat content. Unsaturated fatty acids were in higher concentrations, compared to saturated fatty acids, in all slaughter ages.
