Prolamins are the cereal storage proteins and are rich in proline and glutamine. The maize prolamins are called zeins and are classified according to their solubility. These proteins are deposited as an insoluble mass in protein bodies located in maize endosperm. The a zeins are insoluble in water and soluble in alcoholic solution and represent nearly 75% of the total zeins. a Zeins are comprised of two protein fractions identified in the poly-acrilamide electrophoresis gel (SDS/PAGE), Z19 and Z22, with relative molecular mass of 19 and 22 KDa, respectively. Zeins are studied because of their capability in forming hydrophobic films which can protect pills and nuts from humidity and ox:yyen:. They also can be used as biodegradable packs. |
