The effects of hydrolytic enzymes, extraction operational parameters (particle size and solid-to-liquid ratio) and supplementary operations (centrifugaiton; alcohol addition; freezing and thawing; and ultrafiltration) on soybean oil and protein extraction yields and on components separation were studied. High levels of protein yields could be achieved (oil yield as high as 76% and protein yield 89%) by using low particle size flour (212.5 um) and low solid-to-liquid ratio (1;20). Proteolytic enzyme had a positive effect on the level of extraction for both oil and protein, but a negative effect on the recovery yield of oil in the cream and protein in the isolate. None of the methods resulted in a complete breakdown of the emulsion, although freezing appeared to be more effective than other. |
