Breeding soybean to obtain cultivars with specific characteristics for its utilization is being considered in the breeding program of the National Soybean Research Center of Embrapa, in Brazil. Crosses combinations involving high-yield cultivars and genotypes with special traits such as better flavor (through absence of lipoxygenase enzymes), high protein content, reduced trypsin inhibitor appropriated seed size (large or small), and hilum color (yellow), are being considered to improve soybean for human consumption. Line BR96-25337 is a L-1, L-2, and L-3 null lipoxygenase genotype, with high yield potential (> 4000 kg/ha); line BRM95-50570, which has large seed size (> 20g/100 seeds) and yellow hilum, has good texture and flavor for tofu production - it does not yield as much as commercial cultivars, but may be useful in organic planting systems; lines BRM95-51635 and BRM96-51864, which have small seed size (10g/100 seeds) are suitable for natto production; and lines BRM96-50293 and BRM96-50290, which present high protein content (47%), are being evaluated for productivity. `BRS-155` was the first cultivar released and recommended for sowing in Parana and Santa Catarina States. It presents activity of trypsin inhibitor reduced (30%); in 28 locations, it yielded an average of 3100 kg/ha, only 1.3% less than `IAS 5`, a commercial cultivar. It was released because of its low content of treatment during processing.. Among the Brazilian cultivars, there is a significant genetic variability for isoflavone concentrations, which are highly influenced by environmental conditions. Cultivar IAS 5 showed higher concentrations of total isoflavones in the grains than did cultivar BR-36. In Londrina (Northern Parana State) these cultivars presented 120.5 and 48.9 mg/100g, respectively, while in Ponta Grossa (Southern Parana State) they had 152.4 and 58.5 mg/100g of total isoflavone, respectively. This difference was probably due to local mean temperature(23C in Londrina and 20C in Ponta Grossa). Environmental effects on isoflavone concentrations of total isoflavone (218.7 mg/100g) when grown in Vacaria, Rio Grande do Sul State (28o30` S latitude, 19oC), compared to 106.0 mg/100g observed in Palotina, Parana State (24o27`S latitude, 24oC). Therefore, by choosing location, it is possible to manipulate the concentration of these compounds in soybean cultivars.
