Resumo: O objetivo do trabalho foi avaliar o efeito do retardo na colheita, em condições de campo, na qualidade dos grãos de cultivares de soja, medidos pela porcentagem de grãos avariados, teor de óleo e de proteína e acidez titulável, de diferentes cultivares de soja submetidas ao retardo na colheita. O experimento foi conduzido na área experimental da Embrapa Agrossilvipastoril, no município de Sinop, MT. O delineamento experimental foi realizado em blocos casualizados, em esquema fatorial, 4x4, com quatro repetições. Houve resultados significativos para todas as variáveis analisadas. Além das características de qualidade, avaliou-se também parâmetros agronômicos, sendo que a altura de inserção da primeira vagem e a produtividade de grãos não apresentaram diferenças significativas. Ocorreu aumento dos grãos avariados com o retardo da colheita para as quatro cultivares testadas, porém, obtiveram-se diferenças na porcentagem de deterioração entre as cultivares. Dentre as cultivares testadas, a cultivar BRS 7280RR apresentou o maior percentual de deterioração e a cultivar BRS 7780IPRO, o menor percentual. Dessa forma, conclui-se que há diferenças genéticas entre as cultivares que interferem na qualidade dos grãos após o retardo na colheita. | Abstract: The objective of this study was to evaluate the effect of delay harvest, under field conditions, on agronomic traits and on grain quality of soybean cultivars, measured by the percentage of damaged grains, oil and protein content and titratable acidity. The experiment was carried out in the experimental field of Embrapa Agrossilvipastoril, located in Sinop-MT. The experiment followed a 4 x4 factorial experiment in a randomized complete block design (RCBD) with four replications. Significant effects of delay harvest were observed for all analyzed variables. No significant differences among the soybean cultivars were observed for the height of insertion of the first pod and grain yield. The delay harvest affects the grain quality with an increase on damaged grains with the harvest delay for the four cultivars. Significant differences were observed among the cultivars for grain quality with the delay harvest, indicating genetic variability among the cultivars for this trait. The cultivar BRS 7280RR showed the highest scores of damaged grains and cultivar BRS 7780IPRO, showed the lowest score. Thus, it is concluded that there are genetic differences between cultivars for quality of grains after delay in harvesting. The soymilk is a ready-to-eat, nutritious and naturally cholesterol-free product. Several soybean specialty cultivars were developed in Brazil in order to increase the human consumption of soybean products. The aim of this work was to evaluate the nutritional composition and consumer acceptance of soymilk from three soybean cultivars with special features such as high-protein and isoflavone contents, mild flavor and lipoxygenase-free compared to three conventional ones. The soymilk was obtained after blanching with a bicarbonate solution, grinding, centrifugation and pasteurization. The physicochemical and nutritional evaluation data were analyzed using Analysis of Variance (ANOVA) and Tukey?s test to check differences among means, and the consumer data through cluster analysis and internal preference mapping. The lipoxygenases were inactivated after thermal processing. There were significant differences among soybean cultivars and soymilks related to the protein, isoflavones, oil, and sugar contents and soymilk yield (p < 0.05). The BRS 133 and BRS 284 cultivars and soymilks presented the highest total isoflavone content (p < 0.05). Regarding the overall consumer acceptance, there were significant differences among cultivars (p < 0.05) with means ranging from 5.9 to 6.7 and the lower score was obtained by BRS 267. However, the cluster analysis identified three consumer segments according to preference similarity. The cultivars BRS 284 and BRS 267 reached the highest mean among the consumers of segment 1 (6.8 and 6.7 respectively). The consumers of segment 2 preferred the cultivar without lipoxygenases, BRS 213 (mean of 7.5) while segment 3 preferred the BRS 133 (mean of 7.4). The process of blanching of soybean with bicarbonate solution, grinding with boiling water and pasteurization mitigated the differences between conventional and specialty cultivars and the six cultivars evaluated were suitable for soymilk production.
