This study aimed to evaluate the effect of inoculation with lyophilised and/or activated Lactobacillus buchneri on lactic acid bacteria populations in corn silage. Experimental treatments consisted of corn silage without additives or silage with the inoculants of L. buchneri (1 x 105 cfu/g) applied according to the manufacturer’s recommendations (1 g/tonne fodder) in the forms of the lyophilised inoculant and pre-activated inoculant. Purified isolates from corn silage with and without the inoculant were identified, and 93% of the isolates corresponded to the lactic acid bacteria of the species Lactobacillus plantarum. Among the isolates, no bacteria of the species L. buchneri were detected. The application of lyophilised or activated L. buchneri improved the microbiological profile and reduced ethanol production in corn silage, even without being identified among the isolates captured 70 days after ensilage. |

A soja tipo hortaliça é colhida no estádio de maturação R6 quando os grãos atingem 80% de sua maturidade e estão desenvolvidos totalmente, porém de coloração verde e imaturos. Os objetivos deste trabalho foram avaliar o efeito do tempo e temperatura de armazenamento sobre as características do grão de soja tipo hortaliça BRS 267 minimamente processado e estabelecer alguns parâmetros para o desenvolvimento de conserva ácida utilizando dois delineamentos composto central rotacional 2². No primeiro delineamento foi investigado o efeito da adição de zinco na salmoura e tempo de pasteurização sobre o teor de zinco e estabilidade de cor dos grãos em conserva. No segundo, foi investigado o efeito da adição de sacarose na salmoura e tempo de pasteurização sobre a estabilidade de cor dos grãos em conserva. A partir dos delineamentos foram desenvolvidas duas conservas e avaliadas as propriedades físicas e químicas e comparadas com os grãos in natura e controle. A avaliação do efeito do tempo e temperatura de armazenamento dos grãos de soja tipo hortaliça minimamente processada para manutenção dos atributos teor de vitamina C, cor e peso dos grãos indicou que a melhor condição de armazenamento foi a temperatura de 5°C por 3 dias. Em relação a conserva, no primeiro delineamento foi confirmado que apenas a concentração de zinco na salmoura influenciou o teor de zinco dos grãos em conserva e a esterilidade comercial foi atingida. Enquanto que no segundo a concentração de sacarose na salmoura e tempo de pasteurização influenciaram na tonalidade cromática dos grãos em conserva e a esterilidade comercial foi atingida. A melhor formulação de conserva de grãos de soja tipo hortaliça em pH 3,9 foi obtida com adição de 3,43 g de sacarose, 6 g de cloreto de sódio e 0,29 g de cloreto de cálcio em 100 mL de salmoura com obtenção de uma conserva com melhores características de qualidade quanto a dureza, cor e teor de proteínas, carboidratos, lipídios, isoflavonas totais, glicose e frutose.
ABSTRACT: Vegetable type soybean is harvested at maturity stage R6 when the grains reach 80% of its mature and are fully developed, but with color green and immature. The objectives of this work were to evaluate the effect of time and temperature of storage on the characteristics of vegetable type soybean cultivar BRS 267 minimally processed and to establish some parameters for the development of acid canned using two central composite designs 2². In the first experiment was investigated the effect of zinc supplementation in brine and time pasteurization on the zinc content and in the color stability of the canned grains. In the second, we investigated the effect of adding sucrose in brine and time pasteurization in the color stability of the canned grains and microbiological characteristics. From of the designs were developed two canned and evaluated physical and chemical properties and compared with the in natura grains and control. The evaluation of effect of time and temperature of storage of vegetable type soybeans minimally processed to maintain the attributes vitamin C, color and weight of grains indicated that the best storage condition was at 5 °C for 3 days. Regarding the canned, in the first experiment was confirmed that only the zinc concentration in the brine influence the zinc content of the canned grains and the commercial sterility was achieved. While in the second, sucrose concentration in the brine and pasteurization time influenced the color hue of the canned grains and commercial sterility was also achieved. The best formulation of vegetable type soybeans canned were obtained at pH 3.9 with addition of 3,43 g of sucrose, 6 g sodium chloride and 0.29 g of calcium chloride in 100 mL of brine with to obtain of a canned with better quality features as hardness, color and content of protein, carbohydrates, lipids, total isoflavones, glucose and fructose.
