Resumo - Foram estudadas as principais doenças de arroz que ocorrem em Manaus. Foi constatada a incidência de Helminthosporium oryzae, Pyriculatia oryzae, Rhinchosporium oryzae, Cercospora oryzae e Rhizoctonia solani atacando arroz em ambos os ecossistemas. Na terra firme, a principal doença observada foi a mancha-do-grão e a mancha-parda, causadas por H. oryzae. Na várzea, a queima da bainha e do colmo teve incidência acima de 25%, porém tardia, não afetando o peso de panículas nem o índice de mancha ou chochamento do grão. Abstract - The main rica diseases that occurre in Manaus, AM, Brazi!, were evaluated by two experimenis. On of them was placed on the upland, and lhe other one on lhe periodically flooded lowland. This paper also reports tho occurrence ot Pyricularia oryzae, Helminthosporitim oryzae, Rhynchosporium oryzae, Ceitospora oryzae and Rhizoctonia solani atlacking rice in the Amazonas state. Grain spot and leal spot caused by H. oryzae were the principal problems on lhe upland. On lhe lowland, the incidence ol A. se/aoi was high, more ifian 250Jo, but, the atlack was late and the grain production was not aflected. |

Increased fruit consumption due its protective effect on the organism is accompa-nied by the development of the processing industry of these products. The aim of this work was to optimize fruit pulp-based beverage formulations from the murici and tapereba Amazon region, taking into account their sensory acceptance and anti-oxidant activity. Total soluble solid content, reducing sugar content, titratable acidity contents, pH, and ascorbic acid content were determined in pulps and formulations. The total content phenolic compounds and antioxidant activity were also evaluated. A 22 factorial experiment was formulated to optimize ingredients for the production of murici and tapereba fruit drinks. The murici pulp had higher acidity and higher ascorbic acid content. The analysis of phenolic compounds and antioxidant activity presented higher quantity in tapereba pulp. Tapereba-based beverages had better acceptance by the evaluated criteria. Fruit-based beverages murici and tapereba are a well-accepted product and have important nutritional characteristics. |
