It has been noted that changes in cellulose content during fruit maturation are poor and that there is a net loss of non-cellulosic neutral sugar residues. Nevertheless, studies on acerola (Malpighia spp.) maturation do not include these aspects nor their relationship with acerola softening. Acerola fruits were harvested at the FCAV/UNESP Active Genebank of Tropical and Subtropical Fruits, Jaboticabal, Sao Paulo, Brazil, in November 1993 and separated in four stages of maturity by skin color; green, turning, light red and dark red. Cell wall material of acerola fruits (pericarp plus mesocarp) was isolated and analyzed for cellulose and non-cellulosic neutral sugars. Cellulose content, approximately 27 % of the cell wall, did not show any changes during maturation. Cell wall analysis demonstrated higher contents of arabinose residues; intermediate contents of galactose, glucose and xylose; and lower contents of rhamnose, mannose and fucose. A loss of neutral sugar residues in acerola fruits from light red to dark red stages was found. Arabinose was the main neutral sugar that significantly influenced the overall loss. |
