a b s t r a c t The main objective of this study was to verify genetic trends for milk production (MY305) and age at first calving (AFC). Were also considered levels of inbreeding practiced in the Brazilian dual-purpose Guzera population (TPOP) comparing it with the same parameters estimated for two sub-populations derived from the reference (TPOP): female donors submitted to ovum-pick up (DPOP) and in vitro embryos produced (EPOP) between 2003 and 2013. Estimated breeding values (EBV) and inbreeding coefficients (F) were regressed by the year of birth (or year of in vitro fertilization) of each animal or embryo in order to obtain annual trends for these parameters separately for each of the three populations studied. A positive quadratic (b2 ¼ þ0.000075) effect was detected for the F values in TPOP. Both DPOP and EPOP showed positive linear coefficients (b1), respectively, þ0.00084 (P < 0.001) and þ0.00024 (P > 0.05). Annual mean F for EPOP was higher than TPOP and DPOP through the time series studied. The frequency of individuals with more than 7% F was higher in DPOP. Genetic trends for AFC were 0.187 days/year (P > 0.05); 0.557 days/year (P < 0.05) and 1.48 days/year (P < 0.05), respectively for TPOP; DPOP and EPOP. Genetic trends for MY305 were þ6.75 kg/year (P < 0.001); þ8.2 kg/year (P < 0.001) and þ10.5 kg/year (P < 0.05), respectively for TPOP; DPOP and EPOP. For both traits analyzed, EPOP showed the highest regression coefficients, which confirms a higher selection pressure and lower generation intervals previously expected from this sub-population. Results reported in the present study suggest that mean F is increasing in the Guzera population. Efforts for controlling inbred mating on in vitro fertilization should be considered, as the presence of a bottleneck effect seems to be getting shape on DPOP and EPOP. This study aimed to evaluate changes in the composition of volatile compounds (VCs) in dry-cured sheep legs spiced (SLS) or only salted (control; SLC) along the maturation. Black pepper, white pepper, nutmeg, onion, marjoram, garlic, and salt were used for the seasoning of SLS, while only salt was used in SLC. Then, the cured sheep legs (SL) were dried and matured under specific relative humidity and temperature program, with sampling for volatile compounds (VCs) profile and mycological analyses at 90 and 180 days, intermediate and final stages, respectively. The VCs extraction was carried out by solid-phase microextraction and analyzed in gas chromatograph coupled to a mass spectrometer; and mycological analyses in Dichloran Glicerol 18% Agar. The data were submitted to an exploratory multivariate analysis using principal component analysis (PCA). A total of 123 VCs were detected in SLs, and aldehydes, alcohols, ketones, acids, and esters were common in both periods and treatments. Hexanal, 3-methyl-butanal, 2-pentanone, and ethanol were majorin SLs. Fungal population was higher in SLS when compared to SLC, in both accessed times, with a predominance of xerophilic Aspergillus spp. In PCA plot was possible to discriminate samples by time of maturation in PC1, when samples in intermediate stage has mainly high amount of terpenes compounds from spices; on the other hand at day 180 treatments were correlated with compounds from lipid oxidation (hexanal, 1-octen-3-ol, (E)octen-1-al) and amino acid (branched-chain and aromatic alcohols, aldehydes, and acids) degradation. In PC2, was observed that SLC (90 days) and SLS (180 days) presented a high amount of linear chain organic acids, while SLS was characterized for presence of the linalool, and less compounds from enzymatic and fungal metabolism. In conclusion, maturated SLS increase the terpenes compounds from spices and consequently, it generates less lipid-derived and amino acids VCs than SLC ones.
