Because of their desirable colors, shapes, flavors, and textures, tropical fruits have the potential to offer the consumer new experiences in food products. Relatively little work on tropical fruits is done in the Continental U.S. and of that, most is done in Florida, South Texas, and the extreme Southhhhwest. Before decisions are made to develop potential processed products from specific tropical fruits, certain horticultural and processing characteristics should be considered. These include. Are matuurity and ripening compatible with processing? Does all the fruit on the tree ripen at the same time, and does it ripen over a relatively short period? Do available cultivars mature over an extended time, so that fruit could be processed over a relatively long period. |
