Experiments were conducted on Queen cultivar pineapple to determine optimum conditions for osmotic dehydration with regard to osmosis solute concentration, time and temperature. Kinetics of water loss and solute uptake were determined for such conditions. The drying rate of pineapple wedges was a function primarily of osmosis solute concentration and temperature. Higher drying rates were obtained for osmosis solute concentration of 70 graus and 75 graus B. Maximum osmotic dehydration ocurred at a temperature of 45 graus C. Organoleptic characteristics of osmosis + air dried and osmosis + vacuum dried pineapple were affected significantly by the storage time but the products were still considered acceptable by the panelists. Osmosis + vacuum processing did not improve significantly the quality of the product when compared with the osmosis + air drying process; the latter was more economical and can be recommended in the production of osmotically dehydrated pineapple. |
