The chemical composition and the physical, physicochemical and functional properties of starch extracted from industrial cassava cultivars at different times after planting were studied using a chemometric method. The exploratory analysis of the original data by the Principal Component Analysis "PCA" showed a separation amongst the cultivars and a correlation between the influence of age and the properties that characterize the starch. The PCA separated the cultivar Branca de Santa Catarina from the others (Mico, Fibra e IAC 12-829), the starch granule structure being the main factor for this cultivar having distinct characteristics. Considering the plant age at harvest time, only the starch extracted from plants that were in their 10 month was different from the others (16 and 24 months). |
