Resumo: O objetivo deste trabalho foi avaliar a aceitabilidade de uma formulação de iogurte de leite de ovelha adicionado com alecrim (Rosmarinus officinalis L.). Foram aplicados 162 questionários com perguntas sobre hábito de consumo e características do produto. A avaliação foi realizada com 200 provadores e os valores dos índices de aceitabilidade foram superiores a 70%. A análise de fatores, processada com o método de componentes principais, conseguiu reter, em cinco fatores, 66,1% da variância contida na variáveis originais e após rotação dos fatores pelo método varimax permitiu identificar associação entre sabor, hábito de consumo, preço e características de valor nutricional do iogurte.
Acceptability of yougurt of sheep?s milk with addition of rosemary (Rosmarinus officinalis l.).
Abstract: The aim of this study was to evaluate the acceptability of a formulation of sheep's milk yogurt with addition of rosemary (Rosmarinus officinalis L.). Was applied 162 questionnaires with questions about consumer habits and product characteristics. The evaluation was conducted with 200 panelists and acceptability index values were above 70%. Factor analysis, processed with the method of principal components, managed to hold on five factors, 66.1% of the variance contained in the original variables and after rotation the factors by the Varimax method allowed to identify associations between taste, consumption habits, price and nutritional characteristics of yogurt. |

This study aimed to test methodologies to evaluate the pollen viability of eggplant. The pollen germination was tested in vitro, incubating the pollen during 0.5 and 16 hours in different sucrose concentrations (0; 2.5; 5.0; 7.5 and 10.0 g L -1). For the in vivo germination test, the pollen was placed during 4 and 24 hours in the flower stigma and after that stained with aniline blue and evaluated in an ultraviolet light microscope. The viability of the pollen grains was also evaluated in tetrazolium solutions (at the concentrations of 1%; 0.75% and 0.5%) and the staining was evaluated after 24 hours. The highest in vitro pollen germination was 10.8%, showing the necessity for a better calibration of the culture medium. The in vivo pollen germination was 66%, showing that this is an adequate methodology to estimate pollen viability in eggplant. The methodologies involving tetrazolium solution weren’t efficient to estimate pollen viability evaluation, because of the deficient pollen staining. |
