The species, the slaughtering age and muscle are statistically importante in determining the colour characteristics; the kids fournish lighter meat and more uniform carcass than lambs; the lambs slaughtered at 35 days and the kids at 42 and 35 days give a carcass with lighter meat; the rank of muscle is invariant within the slaughtering age only in lambs; it is confirmed the practical usefulness of the method so far used for evaluation of meat colour characteristics.
